True Q Principles of BBQ.

1. Many delicious meals can be prepared without smoke, but True BBQ is always slow-smoked over hardwood.
As you’ll see at True Q, BBQ can take many forms. Pork, beef, and seafood can all be BBQ. Folks from different regions will swear by their definition of what BBQ ought to be, but we don’t discriminate. At True Q, we respect and pay tribute all the different BBQ traditions, but there is one thing that bonds them all: cooked slow over hardwood smoke.

2. Creating True BBQ requires a love and passion for the art and science of BBQ. It’s nothing short of magical what happens when a cut of meat is smoked at a relatively low temperature for a very long time. It’s hard work, but the flavor and the tenderness can’t be replicated (though many places will try).  There are no shortcuts.

3. True BBQ demands quality, fresh ingredients.
The reason BBQ traditions vary so much by region is because folks used what was close by.  We can expand our reach a bit today, but the formula remains the same. True BBQ starts with quality ingredients and must be served fresh.

True Q Style

At True Q, we incorporate the BBQ wisdom from all over the South in our Q.  Although our pitmaster is North Carolina born and bred, most of our BBQ begins in the Memphis tradition. Many years ago, the good people of Memphis, TN developed a very simple BBQ philosophy: use quality meat, rub it down with delicious spices, and properly smoke it over hardwood.  Like proper Memphians, we like to let the meat and smoke speak for themselves, without drowning it in sauce.  We custom-make our rubs, using a variety of fresh spices, like sweet paprika, brown sugar, and a homemade California Chili Powder.

This isn’t to say we don’t believe in BBQ sauce. We love good BBQ sauce. That is why we provide a variety of sauces to accommodate all of your guests. Our five custom sauces are sure to cover all of your BBQ needs. Our main sauce is a tribute to “the melting pot of American barbeque”, Kansas City.  Ours is fresh-made and tomato-based. It’s tangy and sweet (thanks to the molasses and brown sugar), with just a hint of spice. Many of your guests will also love our Honey BBQ Sauce.

We also offer a variety of regional favorites. Have any eastern North Carolina natives in the crowd? They’ll feel right at home with our classic spicy vinegar sauce, in the ENC tradition. We also provide a “Lexington Dip”, which is a tomato-based sauce common to the western side of N.C. and was really the origin from which many other regional sauces emerged. We’ll provide a S.C. inspired Mustard BBQ sauce to complete the Carolina trifecta.

No pork BBQ sandwich would be complete without a great slaw. Most will find our sweet and creamy Classic Cole Slaw to be quite familiar, but we highly recommend another secret of the N.C. barbeque tradition, our Red BBQ Slaw. It’s the tangy tomato/vinegar based slaw you’ll find in any N.C. BBQ joint west of Raleigh. In our humble opinion, it’s the perfect complement to great pulled pork or chopped BBQ.

The great state of Texas knows a thing or two about barbeque as well. That’s why we provide smoky and incredibly tender beef brisket for your gatherings.
